Back in the days of sleepovers at my best friends place, her dad Hank, would make us endless batches of this delightful dish the morning after a school dance and before we had to go out to do chores on the farm! I loved them then and everyone I serve them to these days loves them too! They are a quick and easy way to make a beautiful and complicated looking meal for breakfast and brunch. You will impress your family and friends with this one, I guarantee it (as long as they like eggs)!

Serves 4 6 eggs 1 cup milk 1 cup flour squirt of vanilla! Preheat oven to 375 C with cast iron frying pan inside(10" or smaller individual pans for a fancier brunch!). Whisk ingredients together until a little frothy. Once oven is to temp, remove pan(s) add 2 tbsp butter to large pan or 2 tsp to each smaller pan (honestly if you aren't afraid of butter, more butter more better is my motto!), let the butter melt and sizzle before adding the batter into the pan, or portion equally into smaller pans. Place in oven and bake for 16-20 minutes, until the batter puffs up and turns a beautiful golden brown. Enjoy with mixed berries, a generous sprinkle of icing sugar and a hefty squirt of lemon juice on top (to taste)!
