This afternoon I was inspired to make my husband's favourite dessert whilst my 6 year old had a playdate making the 3 year old feel left out, upset and needing a fun activity... and heck it's Father's Day this Sunday. So what makes a kid feel better than making with their hands!
This recipe was adapted from an on-line version, I always change things to try and make it a little more healthy without sacrificing taste. These little nuggets of deliciousness definitely pass the test!
6 tblsp Raw Carob powder
1/2 cup Cashew mylk
1/2 cup Coconut oil
1-1/2 cup Coconut Palm sugar
1/2 tsp vanilla extract
1 cup unsweetened and preservative free shredded coconut
3 cups slow cook steal cut oats
In a sauce pan combine top 4 ingredients and simmer for 2 minutes.
Remove from heat add vanilla
Pour over coconut and oats, mix well
Drop teaspoon fulls onto wax paper until cool.
