Delicious Nut Butter Cookies
This evening, it was me, my Blendtec and some fresh ideas to get nutritious food into my kids! I have tried almost everything to make nutritious cookies to no avail... until now!
Tonight's creation (which is kid approved!) is a delectable vegan (not intentional but turned out this way!) nut & seed butter, oat, chocolate chip cookie with sour cherries! These are definitely not your mother's cookies! But they certainly capture the feeling and taste of your childhood cookies... only chalkful o' goodness... and did I say vegan!
I will have to come up with some catchy name to capture all the goodness that is these cookies.... maybe I just did!
Not your Momma's Cookies!
1 cup of homemade Nut & Seed butter (see my recipe below)
1/2 cup of flour (your preference, I used regular wheat flour)
3/4 cup of Oats
1/4-1/2 cup Nut Milk of your choice (see my recipe below)
1/4 cup coconut sugar
1 tsp Baking Soda
1 tsp Backing Powder
1 tsp vanilla
1/4 cup sour cherries chopped
1/4 cup chocolate chips
Mix top 8 top ingredients together in a bowl then fold in last 2. Roll into balls, press with a fork 350f for 15 mins.
Nut & Seed Butter
1/4 cup Peanuts
1/4 cup Cashews
1/4 cup Almonds
2 tblsp Pumpkin Seeds
1 tblsp Chia seeds
Blend all ingredients in a blender or food processor until the consistency of a butter. You may add up to 1 tblsp of grapeseed or peanut oil if it is difficult to blend. Use immediately or store in the fridge in a glass conatiner for 1 month.

Cashews
Almonds
Distilled water
tumeric powder (pinch)
vanilla
Blend in blender until smooth.
